
The potato came to Scotland in the late 1600's. By 1750 parts of Scotland were subsisting on it. To resist disease and pests, Scottish growers develop new varieties. Now Scotland is a major producer of seed potatoes. While many eat too many chips (fries) and crisps (chips), there are fresh potato enthusiasts among home and allotment gardening Scots. They keep old varieties growing: British Queen, Catriona, Duke of York, Epicure, Golden Wonder, Kerr's Pink, Majestic, Red King Edward and Up-To-Date (vintage 1894!). Floury or waxy, it's potato chitting time.
