The Joy of Cooking??

Cooking has always been one of my passions until recently.  The thing that changed that was agreed to do a book about my cooking at the lighthouse.  Instead of something I liked to do it had become something I must do.It seems if you take the free choice out of something it is not as much fun.

I spend a lot of time looking for and trying all kinds of new recipes.There are really no limitations on what I choose but I am trying to stay with things that are easy to come by at the lighthouse.That means lots of fish, potatoes, and rhubarb.Today’s menu is ginger salmon, with dill potato salad and for dessert an apple crumble.  Until I spent a lot of time in the UK I did not use ginger extensively.  Now I really like cooking with fresh ginger.   The recipe for today’s main course follows:

Ginger Salmon

This sweet and tangy topping makes a fabulous tasting piece of salmon taste even better.

Prep Time: approx. 15 Minutes. Cook Time: approx. 20

Minutes. Ready in: approx. 35 Minutes. Makes 4 servings.

2 teaspoons olive oil

1 tablespoon honey

1 tablespoon Dijon mustard

2 teaspoons grated fresh ginger

1 pound salmon fillets

Directions

1 Preheat oven to 350 degrees F (175 degrees C).

2 In a small bowl, blend olive oil, honey, Dijon mustard and ginger

3 Brush salmon fillets evenly with the olive oil mixture.

   Place in a medium baking dish. Bake 15 to 20 minutes in the

   preheated oven, until the fish flakes easily with a fork.

It sounds really good but the big question for me these days is ‘How will it look?’

The real problem with the cookbook is I am supposed to take pictures of my dishes, as we want lots of beautiful pictures to show off the recipes.  Cookbooks with big budgets have food designers who arrange the food to make it beautiful and lots of time that includes the use of non-food items to make the food appealing to the eye.  My cookbook is not a big budget one so I have to arrange things to make them look gorgeous.  That may sound easy but believe me it is not.  A couple of dishes I have had to cook two or three times just to get the picture and I was still not satisfied.
