Hogmanay Bannocks

Bannocks Bannocks are traditional baked oatcakes served around Christmas and Hogmanay. They are easy to make and tasty to eat straight from the oven or with a warm meal. To make bannocks, you should pre-heat your oven to 200 degrees celsius (400 degress fahrenheit). Then take a bowl and mix together 2 cups of porridge oats, 1 cup of flour and two pinches of salt (you can add an optional pinch of soda bicarbonate to make them rise a little). Using a knife, cut three-quarters of a cup of butter or margarine through the dry ingredients until it looks like coarse bread crumbs. Add half a cup of boiling water and mix it thoroughly until it forms a dough. Take a rolling pin and roll the dough into a thin sheet. Cut the dough into small round sections (about 7cm or 3in across) and place on a greased baking tray. Finally, cook your portions in the preheated oven for around 10 minutes at 200C (400F).
